Update all elementary / Pantheon projects to pre-release snapshots, to prepare for the stable releases coming with elementary OS 6.
This includes an soname bump for granite and a renamed library for wingpanel - for both these changes, all dependent packages were rebuilt, as well.
The Fedora specific Pantheon session settings were also updated to the latest version to adapt to changes coming with both GNOME 40 / Fedora 34 and elementary OS 6.
